What we do
Cafe Malta is a casual bistro with better-than-casual food. It’s modelled on the sort of place you’ll find off a winding country road on the Costa Brava or on a side street in Valletta — relaxed, unpretentious and informal, but with excellent food that uses fresh, local ingredients creatively prepared.
We’re inspired by the great cuisines of the Mediterranean. Italy, Spain, southern France, Malta, Morocco & Greece — places where food is prepared with skill and simplicity to make the most of fresh ingredients.
And since the freshest ingredients are the ones in our own back yard, we make the most of local produce — including foods unfamiliar to Mediterranean cooks. After all, why would anyone turn a blind eye to such a wonder as the avocado? The Fredricksburg peach? Brisket?
There’s no microwave. There’s no freezer. There’s a can of tomatoes here somewhere, in case of emergency, but we prefer to keep it fresh.
We enjoy the inspiration of Mediterranean cuisines, and we share their philosophy: Make great, unboring, delicious food from scratch using the ingredients that are available where you live.
