The centerpiece of Jaleo Las Vegas is the Paella Grill, an open-fire wood grill specially designed to cook paellas in the authentic Spanish way. The energetic main dining room also includes a cocktail and tapas bars, where guests can enjoy Josés interpretaion of classic Spanish dishes such as Coca con Erizos de Mar, Jamon Iberico de Bellota, and Gambas al Ajillo, in addition to cocktails including Jaleo’s Sangría and José’s Gin & Tonic.
