Chef Scott Maki

Chef Scott Maki is a native of Lansing, MI and moved to New Orleans to pursue his culinary career in 2003. In his time in Louisiana Maki has developed a real adoration for Cajun and Creole cooking, During turns as Sous chef in Restaurants such as Emerils, Delmonico, August, Luke, and more, as well as serving as executive chef of Mondo, RAMBLA, Feelings Café among others, Maki honed his Louisiana cooking skills and has been proud to contribute to the evolving culinary scene of New Orleans.

Over the Last Decade Chef Maki has been named “Chef to Watch” by the Times Picayunne, has presided over restaurants named “Best New”, “Top Ten”, and “Do Not Miss” by numerous publications both local and National. Maki has been a participant in the American Culinary Federations Best Chefs of Louisiana and was a winner on Food Networks “Chopped”.

Recently Maki has broken away from the fine Dining world in favor of starting a humble Kitchen, Chew Rouge, inside Pirogues Whiskey Bayou in the quickly growing neighborhood of Arabi. Chew Rouge pays homage to the chefs favorite things, his Midwestern roots with their Detroit Style Pizza and the Louisiana foods of his formative culinary training years with dishes like Shrimp Boudin Rangoons. Maki recently opened his second location, GORDO, inside the Marigny gem, Lost Love Lounge. GORDO focuses on one of Chef Scotts admitted guilty Pleasures, Tex Mex/Latin Food. Hefty portions of Nachos, Giant Burritos and Chimichangas and other beer friendly options Fill out GORDOS menu. Maki is joined in business by his Friend Partner and Manager, Kory Poole and his Wife, Camie, and his Small, dedicated staff.

What is Detroit Style Pizza?

After World War Two, there was a surplus of blue steel oil pans from the auto industries war time production. A Detroit pizza maker started using the pans to make pizzas and the style was born. Detroit pizzas are famous for the Charred Cheese around the edge of the pizza created by the pan. The pizza is made in reverse, cheese fist, then toppings and finally finished with sauce. Only in recent years has it become known outside of the mitten!
