Smoke’s Poutinerie has taken the Iconic Canadian dish of Fries, Cheese Curd and Gravy and has created an entirely new food category complete with unlimited variations of topping ingredients to choose from. Whether your preference is beef, chicken, vegetables, pork or simply a different type of sauce, Smoke’s Poutinerie has the recipe for you!
POTATOES
Smoke’s Poutinerie serves fries that are hand-cut daily from fresh hand-cut potatoes. Smoke’s Poutinerie buys direct from Ontario, Québec and the Maritimes only. The potatoes are hand-cut daily into 3/8” fries and immediately placed in cold water to soak in order to remove the starch. We also pick our very own proprietary potatoes and package them for shipping/distribution in Smoke’s Poutinerie branded bags. The hand-cut fries are thoroughly rinsed, then blanched on low heat in trans-fat free canola oil. The fries crisp up quickly and brown when cooked on high heat to be made fresh to order every time!
GRAVY
Smoke’s Poutinerie has created its own thick and rich homemade Signature gravy, not unlike the traditional Québec gravy. It is a bold, aromatic chicken based gravy that complements our hand-cut fries and Québec cheese curd.
Smoke’s Poutinerie also carries various other gravies and sauces including vegetarian brown gravy, and peppercorn gravy.
CHEESE CURDS
Cheese curd is created by separating whey from milk resulting in just curd to be strained, dried and crumbled. Cheese curd used in the Smoke’s Poutinerie recipes are produced by dairy farmers in the Eastern Townships of Québec where you will find some of the finest cheeses in the World. The curd needs to have a ‘squeaky’ sound when poked with a fork and sound like two balloons making out.
