Shank is a full service butcher shop and charcuterie, specializing in Italian-cured meats. We have an ever-changing lunch menu for dine-in or take home. All products are locally-sourced.

Kristopher Doll and Carolyn Kolbe created Shank Charcuterie in 2015. Kris is the butcher. He developed a passion for meat at a young age while hunting with his grandfather in the Colorado Rockies. That passion carried him through culinary school, professional kitchens and charcuteries, ultimately enabling him to open the charcuterie programs of several aspiring butchers. After nearly two decades of honing his trade and teaching his skills, he now brings a traditional butchery to the New Orleans Marigny.

What is Charcuterie?

Charcuterie is a French term that translates as “pork-butcher’s shop.” Traditionally, charcuterie only referred to pork-based products. However, over time it has evolved into a branch of cooking devoted to prepared meat products, such as sausage, bacon, terrines, ham, galantines, pâtés and confit.

While most of these products remain predominantly pork-based, it is not uncommon in modern day to find duck, beef, bison, venison or elk included. Thus, Charcuterie can vary greatly among artisans depending on both individual ingredients and curing processes.
